Creamy Cherry Tomato Pasta

Ingredients
  

  • 3 cups rotini pasta
  • 10 oz cherry tomatoes about 15-20 cheery tomatoes
  • 1 lb chicken I use rotisserie chicken to make this dish super quick, but any pre-cooked chicken will work
  • 1/2 red onion
  • 1 cup mushrooms
  • 1 cup whipping cream
  • 1/4 cup milk
  • 1/2 cup parmesan cheese
  • 1/4 cup pasta water
  • 1 1/2 tbsp hummus use your favorite kind, but I prefer pine nut hummus
  • 1 tsp dijon mustard
  • salt
  • pepper
  • red pepper flakes

Instructions
 

  • Sauté tomatoes, onion, and mushrooms until tomato skins are peeling off and onion and mushrooms are cooked through.
  • While the vegetables are sautéeing, cook the pasta in boiling water for 10/12 minutes in separate pot.
  • Add rotisserie chicken (or any pre-cooked chicken), red pepper flakes, salt, pepper, whipping cream, milk, pasta water, and parmesan to vegetables.
  • Mix until smooth creamy sauce consistency (add more parmesan or whipping cream to your liking).
  • Add hummus and mustard, starting with small amounts until it tastes to your liking.
  • Mix pasta in to the sauce and enjoy!
