Sauté tomatoes, onion, and mushrooms until tomato skins are peeling off and onion and mushrooms are cooked through.
While the vegetables are sautéeing, cook the pasta in boiling water for 10/12 minutes in separate pot.
Add rotisserie chicken (or any pre-cooked chicken), red pepper flakes, salt, pepper, whipping cream, milk, pasta water, and parmesan to vegetables.
Mix until smooth creamy sauce consistency (add more parmesan or whipping cream to your liking).
Add hummus and mustard, starting with small amounts until it tastes to your liking.
Mix pasta in to the sauce and enjoy!
