Spread mayo on one side of both pieces of bread. Toast bread in pan on the stove, mayo side down until they are golden brown.
Spread your favorite mustard on one slice of bread (the untoasted side) and pimento cheese on the other slice of bread.
Crack your egg into a pan on the stove, flip when edges turn white, place provolone cheese on top, and cook for 30-60 seconds.
Add lunch meat, avocado, and egg to your bread and top with the other slice of bread.
