Homemade Fresh Tomato Garlic Pasta

This recipe has quickly become one of my favorites! I make homemade pasta with my Emeril Lagasse Pasta Maker and then create the sauce with fresh ingredients from my garden. You will not regret buying a pasta maker, I love it, my kids love it, and it definitely tastes better than boxed pasta. Homemade Fresh Tomato Garlic Pasta

Ingredients
  

  • 1 lb spaghetti if using the Emeril Lagasse Pasta Maker, use 3 cups flour and 2 eggs
  • 1/2 tbsp oregano if making homemade pasta, add this to the flour, if using store bought pasta, add this to the sauce
  • 1/2 tbsp rosemary if making homemade pasta, add this to the flour, if using store bought pasta, add this to the sauce
  • 2 tomatoes
  • 1 tbsp butter
  • 1 1/2 tbsp garlic
  • parmesan cheese for topping

Instructions
 

  • Cook your pasta according to package directions. If you are making homemade pasta, cook it for a MAX of 3 minutes.
  • While pasta is cooking, grate the tomatoes into a bowl and make sure to remove any big chunks at the end.
  • In a saute pan, add the tomato pulp, butter, herbs (if not already in the dough of the pasta), and garlic. Stir until mixed and butter is melted.
  • Once pasta is cooked, add the spaghetti to the sauce in the saute pan with a little bit of the pasta water.
  • Toss lightly in the sauce, top with parmesan cheese, and enjoy!
