Sausage Cauliflower Skillet
My husband hates cauliflower but I love it, so I’ve been looking for ways to sneak it into dishes and this one was a winner! If you want to hide the cauliflower even better you can grate it to blend more into the rice.
Sausage Cauliflower Skillet
- 1/2 smoked sausage
- 1 cup chopped cauliflower
- 1 1/2 cups chicken broth
- 1 red pepper
- 1 can fire roasted diced tomoatoes (14.5 oz)
- 1/2 yellow onion
- cajun seasoning
Slice the sausage into bite size pieces and sauté the sausage and chopped cauliflower until cauliflower is soft and sausage is cooked.
Once sausage and cauliflower is cooked, add rice and chicken broth. Cover with lid and wait until rice is soft and fluffy.
Add diced tomatoes, red pepper, onion, and cajun seasoning to pan (amount of seasoning is up to your personal preference, but a little goes a long way).
Cook for a couple more minutes until the pepper and onion are slightly soft, (you still want these ingredients to add a bit of a crunch) and then enjoy!
