Crockpot: Chicken, Bacon, and Tator Tots

This has become one of the favorite meals! The creamy rice with some crunchy tator tots makes this an amazing comfort meal especially on a slow relaxing day. I like to serve this with some salad or with my favorite simple cucumber recipe.

Chicken Bacon and Tater Tots in the Crock Pot

Ingredients
  

  • 2 lb chicken
  • 6 oz bacon
  • 1 can condensed cream of chicken
  • 4 cups chicken broth
  • 1.5 cups rice
  • 3 carrots
  • 3 celery
  • 1 yellow onion
  • garlic powder
  • Italian seasoning
  • Mesquite seasoning can substitute with paprika, salt, rosemary, thyme, and cumin
  • 1-2 cups Tater Tots
  • 1/2 cup cheddar cheese

Instructions
 

  • Chop up carrots, celery, onion, and bacon.
  • Add whole chicken breasts, carrots, celery, bacon, onion, spices, 3 cups of chicken broth to crock pot and cook on low for 4 hours.
  • After 4 hours, shred chicken while still in crock pot with two forks.
  • Add final cup of chicken broth and rice to crock pot and cook for another 2 hours. (Rice should be very creamy and soft)
  • Airfry or bake tater tots according to package instructions and add to crock pot for crunch.
  • Add shredded cheese to top and mix until melted.
