Crockpot: Chicken, Bacon, and Tator Tots
This has become one of the favorite meals! The creamy rice with some crunchy tator tots makes this an amazing comfort meal especially on a slow relaxing day. I like to serve this with some salad or with my favorite simple cucumber recipe.
Chicken Bacon and Tater Tots in the Crock Pot
- 2 lb chicken
- 6 oz bacon
- 1 can condensed cream of chicken
- 4 cups chicken broth
- 1.5 cups rice
- 3 carrots
- 3 celery
- 1 yellow onion
- garlic powder
- Italian seasoning
- Mesquite seasoning can substitute with paprika, salt, rosemary, thyme, and cumin
- 1-2 cups Tater Tots
- 1/2 cup cheddar cheese
Chop up carrots, celery, onion, and bacon.
Add whole chicken breasts, carrots, celery, bacon, onion, spices, 3 cups of chicken broth to crock pot and cook on low for 4 hours.
After 4 hours, shred chicken while still in crock pot with two forks.
Add final cup of chicken broth and rice to crock pot and cook for another 2 hours. (Rice should be very creamy and soft)
Airfry or bake tater tots according to package instructions and add to crock pot for crunch.
Add shredded cheese to top and mix until melted.
