Pork Carnitas Verde Casserole

This is a great meal to make ahead of time to freeze, or just freeze the leftovers for a future dinner! You could also substitute the pork for any sort of meat, just make sure you season it well and that it is cooked before you put it in the casserole. You could also use frozen green pepper/onion blend to assemble this dish quicker.

Pork Carnitas Verde Casserole

Ingredients
  

  • 3 cups chopped or shredded pre-cooked pork carnitas I like to use LL Ranch Meats
  • 12 small flour tortillas
  • 1 jar of salsa verde (16 oz)
  • 5 oz cream cheese
  • 1 green pepper
  • 1 yellow onion
  • 1 cup shredded cheddar cheese
  • cilantro for serving

Instructions
 

  • Set oven to 350°.
  • Chop or shred the pork carnitas.
  • Pour small amount of salsa verde into 9×13 casserole dish to lightly coat the bottom.
  • Mis rest of salsa verde with softened cream cheese.
  • Lay down 6 tortillas in the casserole dish.
  • Spread half of the pork carnitas over the tortillas.
  • Spread half of the salsa/cream cheese mix over the meat.
  • Chop up the green pepper and onion and spread half of the chopped pepper and onion mix over the salsa/cream cheese mix.
  • Spread half of the cheddar cheese over the pepper/onion mix.
  • Repeat steps 5-9 for second layer.
  • Bake in oven for 30-35 minutes.
  • Top with cilantro and serve with extra salsa and sour cream.
