Broccoli Kale Orzo Soup

I love any dish that has a combination of orzo and feta cheese. The tang from the feta cheese always pairs well with the softest of the orzo and what better way to bring these two together than in a soup. I’ve learned that sometimes seeing green chunks in a soup can be a big turn off for kids so for any picky eaters, I would recommend adding the kale to the blender with the broccoli, onion, and broth, and blend it thinner and turn this into a fun “green soup”!

Broccoli Kale Orzo Soup

Ingredients
  

  • 1 cup orzo
  • 12 oz frozen broccoli
  • 1 chopped yellow onion
  • 1 lb pre-cooked shredded chicken I like to use rotisserie chicken
  • 5-6 cups chicken broth depends on how thick you want the soup
  • 1 cup chopped kale I use frozen
  • 1/4 cup feta cheese
  • 1/2 cup whipping cream
  • seasonings something salty with a kick: creole, cajun, chipotle, paprika with chili and garlic powder, any of these are great options, use what you have on hand

Instructions
 

  • Sauté broccoli and onion in big pot with a little oil until broccoli is not frozen
  • Add 2 cups of chicken broth and continue to cook until broccoli is soft
  • Pour broccoli and broth into blender and blend until big chunks are gone but not too thin (You can also use an immersion blender instead of a normal blender)
  • Pour back in pot and add chicken, kale, orzo, rest of broth, and seasonings (I use southwest chipotle, garlic powder, smoked paprika, a little salt, mesquite seasoning, and parsley)
  • Once orzo is mostly cooked add whipping cream, feta cheese, and more broth and seasonings if necessary
